Instructions: * Available at natural foods stores and in the cereal or health food section of most supermarkets across the country.
Position rack in center of oven and preheat to 400 degrees. Line twelve 1/3-cup muffin cups with paper muffin liners. Combine flour, bran, baking powder, baking soda, nutmeg, and salt in large bowl. Whisk buttermilk, honey, melted butter, egg and vanilla in medium bowl to blend. Add to dry ingredients and mix just until combined. Fold in cheese. Divide batter equally among prepared muffin cups. Bake until tops are golden brown and tester inserted into center of muffins comes out clean, about 20 minutes. Transfer muffin tin to rack and cool at least 15 minutes. NOTE: These muffins have a nutty-tart balance, with the tangy buttermilk and sharp cheddar cheese playing off the natural sweetness of wheat bran and honey. Delicious with fruit butter and equally appealing if you add some sliced cheese and make muffin sandwiches. Email this Recipe:
