Instructions: Whisk together the egg yolks and honey over a bowl of hot but not boiling water for about 5 minutes until the mixture is light and foamy.
Remove the bowl from the pan stand in a bowl of cold water and stir for 2 minutes. Whip the cream until it is stiff and whisk the egg whites until they are stiff. When the egg yolks are cool stir in the cream and gradually stir in the sherry. Fold in the egg whites. Divide the mixture between 4 individual glasses and sprinkle them with the nuts.
