Instructions: Preparation time 5 minutes
Baking time 40 minutes Preheat oven to 375F (190C). In a bowl, stir honey with butter, garlic and mustard, mashing butter with back of a spoon to help it blend with other ingredients. Place chicken, bone-side down, on a lightly oiled shallow-rimmed baking sheet or pie plate. Season lightly with salt and pepper. Smear half of mustard mixture over meaty side of chicken. Bake, uncovered, in centre of 375F (190C) oven for 20 minutes. Spoon remaining mustard mixture overtop and continue baking until chicken feels springy from 20 to 25 more minutes. Sprinkle with coriander, snipped chives or fresh basil, if you like. Baby carrots and garlic mashed potatoes go well with this chicken. NOTES : This is a super dish, since it uses everyday ingredients to dress up dinner for those nights you dont feel like plain old chicken breasts.
