6 oz low fat lemon yogurt
2/3 cup double strength tea
1/2 cup honey
3 tbl canola oil
1 x egg
1/2 cup quick or old fashioned oats uncooked
1/2 cup whole wheat flour
1 x tablepoon grated lemon peel
1 tbl baking powder
1/2 tsp baking soda
Instructions:
Instructions: Heat oven to 350 degrees. Lightly spray 2 loaf pans, 8 1/2 inches by 4 inches with cooking spray. In a large bowl, combine yogurt, tea, honey, oil and egg with wire whisk or fork, mix well.

Stir in oats and let stand for 10 minutes. In medium bowl, combine flour, lemon peel, baking powder, baking soda and salt, mix well. Add to oat mixture; stir just until dry ingredients are moistened. Do not overmix. Pour into prepared pans.

Bakr 30-35 minutes or until wooden pick/cake tester comes out with a few moist crumbs clinging to it. Cool completely in pan or wire rack. Store tightly wrapped up to 3 days, may be frozen for longer storage.

* to brew double strength tea, bring 2/3 cup water to a rolling boil. Pour boiling water over 2 tea bags. Let stand for 4 minutes, then remove tea bags. Cool to room temperature before using.

I normally use regular tea for this, but I imagine you could use whatever tea youd like, just follow the instructions for brewing time.
