Ingredients:
Amount Ingredient
1/2 cup olive oil
1/2 cup honey
1/4 cup red wine vinegar
1/2 tsp salt
1 tbl chopped fresh thyme
2 x acorn squash, cut into wedges
2 x red bell peppers, cut into 2 inch pieces
2 x green bell peppers, cut into 2 inch pieces
2 sm purple onions, sliced
Instructions:
Instructions: Combine first 5 ingredients in a large bowl; add squash and remaining ingredients, stirring to coat vegetables. Pour vegetable mixture into an aluminum foil-lined roasting pan. Bake at 425 degrees F. 40 to 45 minutes or until tender and lightly browned, stirring occasionally. Serve with a slotted spoon.

Yield: 8 to 10 servings.
