Ingredients:

1/4 cup flour, plain
1/2 tsp bicarb of soda
1/2 tsp salt
1 tsp ground ginger
1/2 tsp cinnamon, ground
1/4 tsp cloves, ground
1 cup brown sugar
185 gm butter
1 x eggs
1/4 cup honey
Instructions:
Instructions: Sift flour, bicarbonate soda, salt and spices. Cream sugar and butter well, then beat in egg and honey. When well creamed, gradually mix in dry ingredients. Chill mixture for easy handling.

Shape rounded teaspoons of dough into balls, dip top of each ball into cup of cold water then in caster sugar. Place sugar side up on ungreased baking trays and bake in a moderate oven (350F) for 12-15 minutes.

Serve with afternoon tea.
