Instructions: Cream butter, add icing sugar and mix well. Add flour, egg whites, honey and ginger and beat until smooth.
Bake 4 wafers at a time. Spoon teaspoonfuls onto a greased oven tray, allowing room to spread. Wafers will be about 10cm diameter when cooked. Bake in a moderate oven (320F) for about 5 minutes or until golden brown. Lift off gently with a knife and allow to cool. Watch carefully while baking as wafers can burn easily. Store in an airtight container until required. To serve: Sandwich 4 wafers together with whipped cream and halved strawberries. Dust top wafer with icing sugar. Serve with strawberry coulis.
