Ingredients:

1 x 1 liter tub soft scoop dairy ice-cream
4 x Crunchie bars, cut into small pieces
175 gm Ginger in ginger wine, roughly chopped, reserving 3 tablespoons of liquor (6oz)
Instructions:
Instructions: Scoop the ice-cream into a bowl and combine with the crunchie bars, ginger and liquor, mix to incorporate. Place in the freezer to harden up again.

Transfer scoops of the ice-cream mixture into the brandy snap baskets and serve immediately.

NOTES : A combination of vanilla ice-cream with the flavours of ginger and honeycomb encased in a brandy snap basket.
