Instructions: Cut the meat into 1 inch cubes and trim off any fat.
Put the onions carrots and celery into a casserole and add the meat in a single layer. Sprinkle on the thyme. Heat the cider and honey. When the honey has melted stir in the vinegar and pour the sauce over the meat. Add salt and pepper. Cover and cook in a preheated oven for 45 minutes (200c/400f/gas6). Beat together the butter and flour stir into the sauce and return to the oven for 5 minutes. Taste the sauce and adjust the seasoning. Creamy pureed potatoes piped on to a dish and browned in the oven for 10 minutes make a delicious partner for this one pot dish. Serves 4 Email this Recipe:
