Place the onions in a large bowl sprinkle with the salt and pour over the water. Cover the bowl with a plate to keep the onions submerged and leave them to soak overnight. Now make the spiced vinegar by placing the vinegar pickling spice honey and sugar together in a saucepan. Bring this slowly up to the boil stirring to dissolve the honey and sugar and simmer for 5 minutes. Then leave overnight. Next day strain the onions dry them a little in a cloth pack them into cold clean jars and then strain the vinegar and pour it over the onions. Seal and label the jars and store for 6 weeks before using. Makes 4.5kg Email this Recipe:
