2 cup uncooked long-grain rice
1 tsp onion powder
2 tbl dried parsley flakes
Salt and pepper to taste
2 can field peas with snaps (15 oz. ea.)
2 lrg onions chopped
6 x strips bacon optional
Instructions:
Instructions: Cook rice according to package directions, using 1/4 cup less water than recommended and adding the onion powder, 1 tablespoon of the parsley flakes, and the salt and pepper.

After rice is cooked, in a separate 5-quart pot, cook field peas, chopped onion and remaining parsley flakes. When onions are soft, add rice and toss until rice is mixed with peas. Cover and put back on low heat for 30-40 minutes (or put in a rice steamer for that amount of time). If rice is not done, add 1/8 cup water and steam 15 minutes more.

Options: If you prefer, fry bacon, then cook onions in bacon drippings before mixing with peas and tossing with rice. Or, cook onions in margarine before mixing with peas.
