1 tbl fresh horseradish, grated
1 tbl butter, melted
1 cup fresh bread crumbs
Salt and pepper
4 x salmon fillets, 5 ounces each
2 x oranges, juiced
1 x lemon, juiced
1 oz vodka
1 tbl orange rind
1 tbl lemon rind
1 tbl shallots, chopped
2 tbl cold butter
1 tbl dill, chopped
Instructions:
Instructions: Preheat oven to 400 degrees. Combine horseradish, melted butter, bread crumbs, salt and pepper to taste in a small bowl. Place salmon on a lightly buttered baking sheet. Cover each fillet with bread-crumb mixture. Bake 5 minutes.

In a medium-size saucepan, mix orange and lemon juices, vodka, orange and lemon rinds, and shallots. Bring to a boil. Whisk in cold butter, salt and pepper to taste. Remove from heat and add dill and caviar.

Place salmon on a serving plate and surround with sauce. Serve immediately.
