Instructions: Preheat oven to 400 degrees. Combine horseradish, melted butter, bread crumbs, salt and pepper to taste in a small bowl. Place salmon on a lightly buttered baking sheet. Cover each fillet with bread-crumb mixture. Bake 5 minutes.
In a medium-size saucepan, mix orange and lemon juices, vodka, orange and lemon rinds, and shallots. Bring to a boil. Whisk in cold butter, salt and pepper to taste. Remove from heat and add dill and caviar. Place salmon on a serving plate and surround with sauce. Serve immediately. Email this Recipe:
