Instructions: 1 Cup Cookie crumbs - divided 1 pint Low-fat frozen vanilla - yogurt; divided In a medium pan combine apples, sugar, water and cinnamon. Bring to a simmer over medium heat. Cover and cook, stirring occasionally, for 15 minutes. Remove cover and cook for 5 minutes more or until apples are soft and the liquid has almost evaporated. Place 2 tb cookie crumbs in the bottom of 4 goblets or wine glasses. Place 1/2 c frozen yogurt on top of cookie crumbs in glasses.
Evenly divide apple mixture among each glass. Using the remaining crumbs, evenly divide among the servings. Serve immediately. NOTE-The apples can be prepared and reheated just before serving time. (wrv) Email this Recipe:
