Instructions: Preheat oven to 400 degrees. Rub potatoes with vegetable oil; bake 1 hour or until done. Meanwhile, fry bacon till crisp; drain; crumble. Measure bacon drippings, adding enough vegetable oil to make 2/3 cup. return to skillet; add onions, salt, pepper, vinegar & sugar; heat.
Cut thin slice from top of each baked potato; scoop out centers; blend them with vinegar mixture, green peppers, bacon. Stuff back into potato shells. Makes 8 servings. Email this Recipe:
