Instructions: Peel the mango and pare slices a little thicker than a $1 coin from all sides of the fruit.
Scatter the coconut on a plate and press the mango slices in it. Turn them and cover the other side. Heat the butter gently in a frying pan. Make sure that it does not burn. Just as it starts to bubble add the slices of mango. You will probably have to do this in two batches. When the coconut starts to brown in a minute or so turn them over and cook the other side. Cut the orange into thick segments without peeling and serve with the drained mango. Squeeze the orange juice over the mango. Serves 2 Email this Recipe:
