Instructions: 1. Preheat oven to 350 degrees. Spray a 9-inch cake pan with cooking spray. Combine flour, baking powder and salt. In a small mixer bowl, beat eggs at high speed for 4 minutes or until thick. Gradually add sugar, stirring at low speed, then increase speed to medium and beat 4 to 5 minutes or until sugar dissolves.
2. Add flour mixture to egg mixture. stir gently just until combined. In a small saucepan, heat milk with butter until butter melts; stir into batter until well-mixed. Turn into pan. Bake 20 to 25 minutes, or just until cake springs back when lightly touched. Run a knife around inside edge of pan to loosen cake. Carefully invert pan and remove cake.
