Instructions: Preheat oven to 350 degrees. Line a 9- by 13-inch baking pan with aluminum foil and coat with nonstick cooking spray.
Rub cavities of Cornish hens with salt and pepper. Stuff hens with orange quarters and place breast-side up in the baking pan. In a small bowl, combine marmalade, soy sauce, and hot pepper sauce; mix well. Coat hens evenly with the marmalade mixture. Bake for 1 to 1 1/4 hours, or until no pink remains and juices run clear. Discard orange quarters and cut hens into serving-size pieces. Drizzle with pan juices and serve. This recipe yields 4 servings. Comments: How can such a small bird be so big on flavor?
