Ingredients:

1 x eggs
1 x egg yolks
1/4 cup sugar (caster)
1/4 cup orange juice
1/4 cup white wine
Instructions:
Instructions: Whisk all ingredients together in a heatproof bowl. Place over a saucepan of boiling water and whisk vigourously until thick and creamy and doubled in volume, about 5 minutes. Do not allow mixture to get too hot. A balloon whisk is best for this to give the required aeration. Use immediately.

Serve over fresh fruits eg. strawberries
