Instructions: Rinse the cauliflower and cut into small florets, using a sharp knife.
Seed the bell peppers and cut the flesh into thin slices. Cut the cucumber into thin slices. Peel the carrots and cut them into thin slices. Melt the butter in a large saucepan, stirring constantly so that it doesnt burn. Add the cauliflower, bell peppers, cucumber, and carrots and stir fry for 5-7 minutes. Season with salt and pepper to taste, cover with a lid, reduce the heat, and leave to simmer for about 3 minutes. Transfer the vegetables to a serving dish, toss to mix and serve immediately.
