Instructions: Make the greens: Heat the olive oil. When hot, saute the spinach for 2 minutes. Season with salt and pepper. Divide among four plates. Shell the shrimp and sprinkle them with the seasonings. Place them in a single layer in a dish and sprinkle with the oil. Place the oiled shrimp in a single layer in the skillet and cook over high heat 1 minute. Turn and cook for 1 1/2 minutes on the other side. Place one fourth of the shrimp on the greens on each plate.
