4 x Lobsters - (1 1/2 lbs ea) killed, meat removed from claws and tails
2 lrg Ripe red tomatoes sliced 1/4" thick
2 lrg Ripe yellow tomatoes sliced 1/4" thick
1 lrg Sweet onion sliced 1/4" thick
1 x Haas avocado sliced
2 tbl Mayonnaise
1/4 tsp Ancho chili powder
Juice of 1 lemon
Salt to taste
Freshly ground black pepper to taste
Instructions:
Instructions: Prepare a wood or charcoal grill and let it burn down to embers. Grill lobster meat for 15 minutes or until cooked.

In a small mixing bowl combine mayonnaise, Ancho powder and lemon juice. Season to taste with salt and pepper.

On the baguettes spread mayonnaise and layer tomatoes, onion and avocado. Add lobster. Serve immediately.

This recipe yields 4 servings.
