Ingredients:
Amount Ingredient
4 x Hot and spicy chicken drumsticks and thighs or 12 hot and spicy chicken wings

1/2 x Cucumber, finely diced
1 tbl Freshly chopped mint
1 tbl Freshly chopped coriander
300 ml Natural yogurt, (1/2 pint)
Instructions:
Instructions: Delicious accompanied with basmati or pilau rice and mango chutney.

1. Barbecue the chicken drumsticks or thighs over a moderate heat for 30-40 minutes, or the chicken wings for 25-30 minutes, turning occasionally.

2. Mix together the cucumber, mint, coriander and yogurt then chill until required. Season to taste just before serving.

3. Serve the chicken with the raita.

NOTES : A delicious twist to barbecued chicken, with the fresh and light raita complementing the hot and spicy chicken.
