1/3 lb margarine
2 tbl bacon bits
1/2 cup red onion
1/2 cup diced ham
1/2 cup celery in 1/2" dice
1/2 cup green pepper in 1/2" dice
1 tbl fresh garlic puree
1 tsp dried oregano
1 tsp dried basil
1 tsp thyme leaf
2 tbl sugar
1/2 tsp salt
1/2 tsp cayenne pepper
1 tsp freshly-ground black pepper
1/3 cup flour
1/2 cup water
1 tbl chicken base
2 tbl vegetable base
2 can chopped tomatoes - (16 oz ea)
Instructions:
Instructions: Melt margarine in sauce pan. Add bacon, onion, ham, celery, peppers and garlic. Cook until softened. Add all seasonings and mix. Cook for 2 minutes. Stir in flour and cook for 3 to 4 minutes. Add water, chicken base, vegetable base, tomatoes, and Worcestershire. Mix Well.

Bring to a boil then reduce heat and simmer for approximately 20 minutes or until desired thickness. Serve on Houlihans Jambalaya Rice (see recipe). Garnish with cooked jumbo shrimp if desired.
