Instructions: The easiest way to do this is to use soymilk; it substitutes for dairy milk perfectly in any recipe. Some supermarkets dont carry it, but most natural foods stores do. Try Oriental food stores too; lots of times they sell fresh soymilk.Here are some other ways to add creaminess to soups without using cream:

1. Mash the soup several times with a potato masher; this will thicken it up.

2. Put 1 to 2 cups of the soup in the blender until smooth, and stir back into the soup.

3. Put 1 to 2 cups of the soup in the blender with 1/2 pound of tofu,and blend until smooth. Stir back into the soup.This is the equivalent of stirring in sour cream.

4. Throw in a handful or rice. Usually, if the soup is nice and thick, you wont miss the milk.

5. Use nut milk. Its easy to make. Process 1/4 to 1/2 cup of nuts (any kind tastes good - peanuts, almonds, cashews, sunflower seeds, etc.) in a blender with 1 to 2 cups of water until very smooth. This is a good replacement for dairy milk in almost any recipe. Its good, too, in breads or casseroles.

6. Make a batch of nutritional yeast "cheese", or a white sauce and stir that in.

7. Eat a nice clear soup, like miso, more often!

8. Strain some liquid from nonfat yogurt; Line a strainer with a paper towel. Scoop the yogurt in and let strain overnight in the fridge. This makes imitation sour cream and can be used in all kinds of recipes that call for yogurt, sour cream, or mayo.

9. Use soymilk or rice milk. these work great and are the easiest of all to use and substitute. Be sure to get soymilk that is plain, with no honey or vanilla or any flavoring added. Flavored, sweetened milk works good in desserts or breads for baking, but can ruin gravy or soup.
