1 tbl olive oil
1 med onion, chopped
2 x cloves garlic, minced
1/2 cup chopped tomatoes
2/3 cup pitted, halved green olives
3 tbl capers
1 tsp red pepper flakes
1/2 cup dry red wine
1 tbl butter
Instructions:
Instructions: Heat olive oil in a saute pan over medium high heat. Add onion. Saute until onion begins to brown. Add garlic. Cook, stirring, another 30 seconds. Add tomatoes, olives, capers, red pepper flakes and wine. Bring to a boil. Cover; lower heat and allow to simmer. Meanwhile, melt butter in another pan. Add snapper. Cook until browned on each side, about 4 minutes total. Add fish to tomato mixture. Cover and cook another 2-3 minutes, or until snapper is cooked through.
