Instructions: In a food processor, puree garbanzo beans, tofu, cumin, lemon juice and 1 tbs of oil until smooth. Stir in parsley and salt & pepper to taste.
Put in bowl and drizzle with remaining olive oil and sprinkle with addl parsley. Serve with pita bread or crackers. NOTES : Here is a recipe that I made as an appetizer for a luncheon. I was a big hit, and people were amazed when I told them there was tofu in it. Email this Recipe:
