Instructions: Spray both sides of the eggplant slices with olive oil. Place on cookie sheet and brown on 1 side. (Watch carefully to make sure it doesnt burn)

Take out of the oven and top with sauce, cheese and other ingredients. Bake at 350 until cheese melts.
