Instructions: Substitute 2 tsp. almond extract for the ginger. Roll each half of dough into eleven 1/2" thick ropes ranging in length from 4" to 14". Form rings, on cookie sheets, by lightly pressing ends of each rope together. Bake 12-15 minutes. Drizzle cooled rings with plain Royal Icing. Stack to make 2 towers. Decorate.
