Instructions: In a large bowl, beat eggs until light & fluffy. Beat in sugar, pudding mix and mix until smooth. Stir n half & half & coconut. Pour into ice cream canister. Freeze in ice cream maker according to manufacturers directions.

Makes 2 quarts.

Cooks Notes: coconut is optional, do not attempt to make this with lemon pudding. Uses uncooked eggs.

Use other pudding flavors to make ice cream (except for lemon). My son won Grand Champion in 4H with this recipe (chocolate ice cream)
