1 lb white beans
8 cup water
2 cup water
6 cup chicken broth
1/2 cup chopped onion
1/2 cup carrots sliced or diced
1/2 cup celery sliced or diced
16 oz tomatoes
freshly ground pepper to taste
1 x bay leaf
2 tbl olive oil
3/4 tsp salt optional
Instructions:
Instructions: 1. Cook beans in 8 cups of water for 35 minutes under high pressure.

Drain.

2. Return beans to pressure cooker. Add broth, 2 cups water, onion, carrots, celery, tomatoes with juice, pepper and bay leaf.

3. Cook under high pressure for 20 minutes.

4. Remove bay leaf. Add olive oil. Season with salt and hot pepper sauce.

Pressure cookers are amazing things when it comes to cooking beans!

I often eat this soup for lunch with a hunk of good bread and some fruit.
