1 cup finely grated carrots
3/4 cup uncooked instant rice
2/3 cup shredded mild cheddar cheese
1/4 cup chopped green onion
1/2 tsp dried basil
1/2 cup milk
3/4 cup Bisquick
3 x eggs (or 3/4 cup egg substitute)
1/2 tsp salt
Instructions:
Instructions: Grease 9-inch pie plate. Mix carrots, rice, cheese, onion and basil. Spread this mixture in bottom and sides of pie plate to form "crust."

Beat milk, Bisquick, eggs, salt and pepper until smooth (15 seconds in blender on high, or one minute with hand beater). Pour over "crust" in pie plate.

Bake at 400 degrees for 30 to 35 minutes (set pie plate on cookie sheet in oven).

It is done when knife inserted between center and edge comes out clean.

Cool 5 to 10 minutes.

Makes 5-6 servings
