Instructions: Bring the milk or cream to a simmer over low heat. Add the cheese and stir to melt. Do not allow the sauce to boil (it will curdle, which does not affect the taste but it doesnt look very appetizing!). Once the cheese has melted, stir in the flour, salt, pepper and paprika or cayenne. Cook and stir until the sauce thickens. Just before serving, stir in the butter or margarine until it is melted. Toss with your favourite hot cooked pasta.
