Course: Savory Sauces & Condiments Marinate seafood in the refrigerator for 20 minutes to 1 hour, or chicken for as long as 8 hours. The basic recipe yields enough to marinate 2 lbs. of fish or chicken. 1. In a small dry skillet, toast cumin, coriander and mustard seeds over medium heat, stirring constantly, until fragrant, about 2 minutes. Transfer to a spice grinder or mortar and pestle and grind to a fine powder. Add paprika, cayenne pepper, salt and turmeric. 2. In a medium bowl, stir together the yogurt and lime juice. 3. Finely chop the onion, garlic and ginger and add to the yogurt mixture. 4. Add ground spices to the yogurt mixture and combine well. NOTES : Here is a recipe for any of you who enjoy Indian foods.
