1 sm Onion, minced
1 cup Blue, white or yellow cornmeal
1 tsp Salt
1 cup Milk
1/2 cup Cubed cheese, up to 1, up to
1 cup Pork cracking or 1/2 cup crumbled, cooked bacon
2 tbl Lard or bacon fat
1 cup Unbleached flour
Instructions:
Instructions: 1 Saute the onion with the lard in a small heavy 8" frying pan. Mix together the meal, flour, salt and baking powder in a bowl.

2 Add the onion and the rest of the ingredients and pour the mixture into a hot frying pan. Bake in an oven at 450f for 20-25 minutes. Cut into wedges and serve.
