Ingredients:

Pizza dough
15 gm fresh yeast
2 tbl warm water
250 gm plain flour
1 tsp salt
2 tbl olive oil
3 tbl milk
Topping
3 tbl olive oil
500 gm tomatos dinned de seeded and chopped
1 x salt and pepper
To finish
125 gm mushrooms sliced and sauted
3 clv garlic finely chopped
Instructions:
Instructions: Cream the yeast with the water.

Sift the flour and salt into a bowl make a well in the centre and pour in the yeast oil and milk.

Mix to a firm but pliable dough adding a little more milk if necessary.

Turn onto a floured surface and knead vigorously for 5 minutes.

Place in a clean basin cover and leave to rise in a warm place until doubled in bulk.

Divide the risen dough into 6 portions shape into balls and roll into 10cm circles.

Brush with half of the oil cover with the tomatoes and season well.

Top with the mushrooms garlic and cheese.

Sprinkle with the remaining oil and leave to rise in a warm place for about 15 minutes.

Bake in a preheated hot oven 220 degrees C /425 degrees F Gas Mark 7 for about 15 minutes.

Serve immediately.

Alternative finishes
1. Chopped salami and olives.

2. Sliced peppers diced Mozzarella cheese and strips of anchovy fillet.
