2 lb Fresh spinach, cooked, drained and chopped
2 tbl Lemon juice
1/2 cup Onion, chopped
2 x Cloves garlic, minced and sauteed with onion in a small amount of olive oil
1/2 cup Grated Parmesan or cheddar cheese
Instructions:
Instructions: Prep: 10 min, Cook: 15 min. Preheat oven to 350 F. Season the spinach with the lemon juice. Combine with sauteed onion and garlic, and transfer to oiled individual ramekins. Sprinkle cheese over the spinach mixture and, using the back of a spoon, make a 1 inch deep well in each. Crack and drop one raw egg into each well and bake until the eggs are set, about 8 minutes.
