2 lb thinly-sliced beef see * Note
1 med onion halved, and
sliced very thinly
Juice of 2 lemons
2 x garlic cloves minced
1/4 cup chopped parley
2 tbl dried oregano
3/4 cup extra-virgin olive oil
1/2 tsp freshly-ground black pepper
1 tsp salt
Pita bread
Plain yogurt (optional)
----------------- GREEK SALAD ----------------
1 x cucumber peeled, diced, or
cut into thin slices
3 x ripe tomatoes seeded, diced
1/2 cup minced red onion
3 tbl chopped parsley
1 tsp chopped fresh mint (optional)
1 tbl lemon juice plus
1 tsp lemon juice
1/4 cup extra-virgin olive oil
1/4 tsp salt
Instructions:
Instructions: * Note: Ask your butcher to slice beef from the sirloin tip on the meat slicer. The slices should be about 1/8-inch thick.

Mix all ingredients except salt. Let marinate in the refrigerator for 3 to 24 hours. It will be better if allowed to marinate for 1 day.

Add salt. Stir well. Grill individual slices over high heat. Each piece should take about 2 to 3 minutes.

Warm pita on the grill. When the slices are cooked, place them on a cutting board and cut into 1/2-inch strips.

Fill the pita pockets with meat, then Greek Salad, and if desired, a drizzle of plain yogurt.

For the Greek Salad: Mix all ingredients together. Taste for seasoning and serve.

Comments: These take just minutes to cook and are addictive so beware!
