2 lrg potatoes thinly sliced
1 x 10 oz pkg frozen spinach cook and drain
salt & pepper to taste
2 cup your favorite tomato pasta sauce
1 cup Pesto sauce, optional recipe below
1 x 15 oz contai ricotta cheese
1/2 lb mozzarella cheese sliced
1/4 cup Parmesan cheese grated
Instructions:
Instructions: Preheat oven to 375 degrees. Grease a 9 x 9 baking pan. Steam the sliced potatoes until barely tender, about 10 minutes. Cook frozen spinach and then drain. Layer half the potatoes in the baking pan and sprinkle with salt and pepper. Add half of the tomato sauce, all of the spinach, the optional pesto, the ricotta and half of the mozzarella. Repeat with potatoes, salt and pepper, remaining sauce and mozzarella cheese, and all of the Parmesan cheese. Drizzle olive oil evenly over the top. Bake covered for 30 minutes in a 375 degree oven. Uncover and bake untile the top is bubbly and starting to brown, another 30 minutes or so.

Pesto Sauce

1 cup packed fresh basil leaves
4 cloves garlic, peeled and mashed
1/2 cup walnuts or pine nuts
1/2 cup olive oil
2 tablespoons lemon juice
1 cup parmesan cheese
salt to taste
Put all ingredients in food processor and blend until nuts are well ground.
