4 cup whole-wheat flour, preferably stone ground
2 cup unbleached white flour
1 tsp baking soda
1/2 tsp salt
2 cup buttermilk
Instructions:
Instructions: Mix the flours, baking soda and salt in a bowl. Make a hole in the middle and add the milk, stirring vigorously, to make a thickish dough, not too floppy. Mix well; turn out onto a floured board; make a round cake 2 inches high and 7 inches across. Warm a cast iron skillet or a round cake pan in the oven for 3 minutes. Take it out, grease and flour it. Add the dough and with a wet knife make a cross cut on the top. Bake for about 40 minutes, or until cooked through.

Remove from the oven and wrap the loaf in a clean tea towel to cool for 5 to 6 hours.
