Instructions: Antipasta (Antipasto, Antipasti) literally means "before the meal," and it is a custom in Italian homes never to keep people waiting for food. As soon as guests arrive they are served an antipasto a piedi, an appetizer that they can nibble on even before they are seated.
Place the greens on large plate. Garnish the outer rim with the tomato quarters. Top with the prosciutto, pepperoncini, salami, pepperoni, mozzarella, provolone, and any optional ingredients. To prepare the dressing, place the vinegar, basil, and garlic in the bowl of a food processor. With the processor running, slowly add the oil. Drizzle the dressing over the salad.
