1 cup chopped onion
1 tsp olive oil
1/4 cup water
2 cup sliced zucchini
2 cup canned peeled tomatoes with juice
2 cup cooked white beans, (navy)
OR kidney beans
1/3 cup chopped green bell pepper
2 tbl minced garlic

Instructions: MAKES 4 SERVINGS. VEGAN

This stew is reminiscent of Italys famed minestrone.

In a large, heavy skillet over medium-high heat saute onion in oil and water until soft but not brown. Add zucchini, tomatoes, beans, bell pepper, garlic and basil. Reduce heat to medium and cover skillet. Simmer stew 15 minutes, stirring occasionally. (Add water if needed to prevent scorching.) Before serving, puree 1 cup stew in a blender; add back to pot.

Makes 4 servings.
