Instructions: For the Garlic Oil: Let garlic soak in the 2 tablespoons olive oil for 1 hour before using.
Preheat oven to 400 degrees. Line a cookie sheet with foil. Dribble 2 tablespoons garlic oil over Boboli, sprinkle with cheese and bake for 4 to 5 minutes, until hot, but not crisped or dried. Cut the Boboli into 6 wedges. Remove to a serving plate and cover, generously, with the cold Tomato-Basil Topping; serve hot. For the Tomato-Basil Topping: Blend all ingredients thoroughly and chill for 2 hours before serving. Just prior to serving, drain to eliminate excess liquid. This recipe yields 6 servings.
