2 tsp extra-virgin olive oil
10 oz skinless boneless chicken breast cut in 1/2" pieces or use chicken tenders
5 oz hot Italian sausage cut into 1/2" thick pieces sweet or mild may be used
2 tbl red wine vinegar
2 med green bell peppers cut into strips
1 med red onion chopped
2 x garlic cloves minced
1/2 tsp dried basil leaves
1/2 tsp dried Italian seasoning
2 cup plus 1/2 cup canned crushed tomatoes
1/2 cup low sodium chicken broth
2 tbl grated parmesan cheese
Instructions:
Instructions: 1. EIn a large nonstick skillet, heat oil, add chicken. ECook over medium-high heat, stirring frequently, 6 to 8 minutes, until golden and cooked through. EWith a slotted spoon, transfer chicken to bowl, set aside.

2. EAdd sausage to skillet, cook, stirring frequently, 8 to 10 minutes, until browned. EPour in vinegar, cook 1 to 2 minutes, until liquid evaporates. EAdd peppers, onion, garlic, basil and Italian seasoning, cook, stirring frequently, 4 to 5 minutes, until tender.

3. EStir in tomatoes, broth, cheese and capers, bring to a boil. EReturn chicken to skillet, reduce heat to low. ESimmer, stirring occasionally, 5 to 10 minutes, until sauce thickens slightly. EServe over pasta.
