Ingredients:
Amount Ingredient
1/4 lb salami chopped
2 tbl olive oil
1 x onion chopped
6 cup water
2 x carrots sliced
2 cup coarsely-shredded cabbage
2/3 cup chopped celery with leaves
Salt to taste
Cayenne to taste
1 can chick-peas - (19 oz) drained
1/2 cup uncooked macaroni
1 x garlic clove minced
2 tbl minced fresh parsley
1/2 cup Romano cheese
1/2 cup light cream
Instructions:
Instructions: Brown salami in olive oil. Add onion and brown lightly. Add next 6 ingredients. Simmer, covered, for 1 hour. Add chick-peas and simmer for 30 minutes. Add macaroni and simmer for 20 minutes longer.

Just before serving, stir in garlic, parsley, Romano, cream and escarole. Serve with additional cheese.

This recipe yields 2 servings.
