1 stk margarine
2 cup sugar
1/2 cup Crisco
5 x eggs, separated
1 tsp vanilla
----------------- ICING ----------------
11 oz cream cheese, softened
1 stk margarine, softened
2 cup flour
1 tsp baking soda
1 cup buttermilk
1 sm can coconut
1 cup pecans, chopped
1 box powdered sugar

Instructions: Cake:
Cream margarine, Crisco and sugar together until well blended. Add beaten egg yolks and vanilla. Sift flour and soda together. Add to margarine mixture, alternating with buttermilk. Fold in beaten egg whites, coconut and pecans. Bake in 2 9-inch or 3 8-inch prepared cake pans at 325 degrees, until toothpick inserted in center comes out clean.

Icing:
Cream margarine and cream cheese until well blended. Gradually add powdered sugar. Blend until smooth. Add vanilla.
