1 x Leg of boar
Fat ham for larding
Butter
1 x Onion sliced
1 x Carrot chopped
1 x Celery rib chopped
1 lrg Parsley sprig chopped
Salt to taste
Freshly-ground black pepper to taste
1 cup White wine
Instructions:
Instructions: Lard a leg of boar with strips of fat ham. Brown in butter with onion, carrot, celery rib, parsley sprig, and salt and pepper. When browned, pour on white wine and cook for 2 minutes. Add stock. Cover and simmer very gently for 3 hours.
