Instructions: Put in a 4-quart saucepan. Wash thoroughly. Cover the lentils with about 4 inches of water and bring to a boil. Cook for approximately an hour.
Add carrots, onions, celery, garlic, salt, and pepper. Remove sausage from the casing. Brown the meat in a frying pan. Add the sausage to the lentils along with a spoonful or two of the drippings. Cook for one hour. Add the tomatoes and cheese and cook for another half hour. Email this Recipe:
