35 lb Lean wild pig chopped fine
15 lb Fatback meat from wild pig chopped fine
(or use domestic for enough fat)
1/4 lb Salt
2 oz Sugar
3 oz Freshly-ground white pepper
1 oz Ground coriander
1 oz Grated nutmeg
1/2 oz Paprika
1/4 oz Garlic powder
Instructions:
Instructions: Season meats with blended seasonings, mixing well. Stuff into casings. If your stuffer needs liquid, dissolve spices in 2 quarts water with 3/4 ounce saltpeter and blend into meats. Can also be formed into patties.
