4 med -sized artichokes
1 x egg

100 gm of parmesan cheese
Instructions:
Instructions: After having removed the outer hard leaves, cut four middle-sized artichokes into 8 sections each, and keep them in water with a few drops of lemon juice for a few hours: this will take away the artichokes slight bitter taste.

Drain them well, flour them, and then fry them after having dipped them in a beaten egg. When they are ready, place a layer of fried artichokes in a baking pan, without adding any fat. Cover them with grated parmesan cheese, place some mozzarella cheese slices on it. Add a second layer of fried artichokes, and cover these ones too with parmesan and mozzarella cheese.

Place the pan into the oven at moderate heat, for about 10 minutes (till the cheese is melted).

Eat warm.
