Instructions: Dice onion and tomatoes.
If using a whole chicken cut into pieces (legs, breasts, thighs, wings) and season well. Melt butter and oil in pan, add chicken, and cook until chicken is browned, turning often. Add finely chopped onion and crushed garlic, cook a further 2 minutes until softened. Transfer to ovenproof dish. Add tomatoes, wine, gravy, basil, salt and pepper. Mix ingredients slightly. Cover, bake in moderate oven 370F/185C for 40 minutes or until chicken is tender. Email this Recipe:
